Full subprimals are recommended for dry-aging because the larger the cut of beef, the longer you can dry-age for best results. Our patent-pending standalone Vertical Truss Rack is designed to make loading and securing a full subprimal super fast and easy while keeping your hands clean.
A vertically racked subprimal optimizes airflow and allows for peak capacity in any space. Using two vertical truss racks maximizes optimization for your dry-aging production runs.
The Vertical Truss Rack will also leave a 1.5" imprint on the subprimal so you always know where to cut your steaks!
Comes with one 6m length of butcher twine.
