Ingredients:
- 2 large sweet onions, like Vidalia
- 3 cup buttermilk
- 3 cup flour
- 1 1/2 tablespoon salt
- Lots of black pepper
- Canola oil for frying
Directions:
Using a mandolin, slice the onions very thin. Place onions in a bowl and cover with buttermilk for at least one hour. Combine flour, salt, and pepper in a large bowl and set aside. Heat oil to 375 degrees.
When the oil is hot, grab a handful of onions, place into the flour mixture, separate each ring with your fingers and make sure each are coated. Shake off excess, and carefully place into hot oil. Stir to separate and fry for a few minutes. Remove as soon as they turn golden brown. Place on paper towels to remove some of the excess oil. Season with salt immediately. Repeat until all of the onions are fried.
